Ingredients
2 tablespoons olive oil
14 ounces smoked Polish sausage, sliced
4 medium potatoes, cubed or sliced
1 large onion, thinly sliced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon garlic powder (optional)
Instructions
1. Slice the sausage into rounds, cube or slice the potatoes, and thinly slice the onion.
2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausage and cook until browned, about 5–7 minutes. Remove and set aside.
3. Add the remaining oil to the skillet and cook the potatoes until golden and fork-tender, around 10–12 minutes. Stir occasionally.
4. Season the potatoes with salt, pepper, paprika, and garlic powder if using.
5. Add the onions to the skillet and cook until soft and caramelized, about 5 minutes.
6. Return the sausage to the pan, stir everything together, and cook for another 2 minutes to heat through.
7. Serve hot and enjoy!
Notes
Make sure the potatoes are cut evenly so they cook at the same rate.
Pre-cooked sausage works best and gives more flavor.
For crispier potatoes, avoid overcrowding the skillet.
