Description

Ingredients

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 tbsp chili powder

1 tsp cumin

1 tsp paprika

1 tsp salt

1/2 tsp black pepper

1 can (14.5 oz) diced tomatoes

2 tbsp tomato paste

1 can (15 oz) chili beans

2 cups shredded cheddar cheese

4 cups Fritos corn chips

1/4 cup sliced green onions (optional)

1/2 cup sour cream (optional)


Instructions

1. Preheat oven to 375°F (190°C).

2. In a skillet, brown the ground beef over medium heat until fully cooked.

3. Add diced onion and cook until softened, about 3–4 minutes.

4. Stir in garlic, chili powder, cumin, paprika, salt, and pepper. Cook 1 more minute.

5. Mix in diced tomatoes, tomato paste, and chili beans. Simmer for 10 minutes.

6. In a baking dish, layer half the Fritos, then half the beef mixture, followed by half the cheese.

7. Repeat layers with remaining Fritos, meat mixture, and cheese.

8. Bake uncovered for 15–20 minutes or until the cheese is melted and bubbly.

9. Remove from oven and cool slightly before serving.

10. Garnish with green onions and a dollop of sour cream if desired.

Notes

Use chili cheese Fritos for extra flavor.

Adjust spice levels with more or less chili powder.

Great make-ahead dish for parties—just reheat before serving.
