Description

Ingredients

1 cup unsalted butter

1 ½ cups chopped pecans

1 cup brown sugar

½ cup granulated sugar

1 large egg

2 teaspoons vanilla extract

2 ¼ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

2 cups powdered sugar

3 tablespoons heavy cream

½ teaspoon vanilla extract (for frosting)


Instructions

1. Melt butter in a skillet over medium heat and add chopped pecans. Toast for 4–5 minutes until fragrant. Set aside to cool.

2. In a large bowl, cream remaining butter with brown sugar and granulated sugar until light and fluffy.

3. Add egg and vanilla extract. Mix until fully incorporated.

4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to the wet ingredients.

5. Fold in the cooled butter-toasted pecans.

6. Scoop cookie dough into balls and place on a parchment-lined baking sheet.

7. Bake at 350°F (175°C) for 10–12 minutes until edges are golden. Cool completely.

8. For the frosting, whisk powdered sugar, heavy cream, and vanilla extract until smooth and spreadable.

9. Frost each cooled cookie and top with extra pecans if desired.

Notes

Use real butter for the best depth of flavor.

Toast the pecans until just golden for peak nuttiness without burning.

Let cookies cool fully before frosting to avoid melting the topping.
