Ingredients
1 lb chicken breast
12 oz rigatoni pasta
3 tbsp unsalted butter
4 garlic cloves, minced
1 cup heavy cream
3/4 cup freshly grated Parmesan cheese
2 cups chicken broth
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp Italian seasoning
2 tbsp chopped fresh parsley
Instructions
1. Season cubed chicken breast with salt, pepper, and Italian seasoning.
2. In a large skillet, heat olive oil and sear chicken until browned on all sides. Remove and set aside.
3. In the same skillet, melt butter and add minced garlic. Stir until fragrant but not browned.
4. Pour in chicken broth and heavy cream. Add rigatoni and bring to a simmer.
5. Cook rigatoni in the sauce for 12-14 minutes, stirring occasionally. Add broth if needed.
6. Return cooked chicken to the skillet and stir gently to combine.
7. Turn off the heat and stir in Parmesan until melted and creamy.
8. Garnish with chopped fresh parsley and serve hot.
Notes
Use freshly grated Parmesan for the best melt and flavor.
