Description

Crispy Garlic Butter Potatoes are the perfect easy side dish made with baby Yukon Golds, fresh garlic, butter, and parsley. These pan-roasted potatoes are golden and flavorful, great for dinner, brunch, or holidays. Quick to prep, loaded with savory richness, and guaranteed to please!


Ingredients

1.5 pounds baby Yukon Gold potatoes

3 tablespoons unsalted butter

4 garlic cloves, minced

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Halve the baby potatoes and add them to a pot of salted water. Bring to a boil and cook for 10 minutes until just fork-tender. Drain and let them steam-dry.

2. In a large skillet, melt butter and olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant but not browned.

3. Place the drained potatoes cut-side down into the skillet. Cook undisturbed for 6 to 8 minutes until golden and crispy. Flip and crisp the other side.

4. Toss the crispy potatoes in the garlic butter until coated. Season with salt, pepper, and chopped parsley. Serve immediately.

Notes

Perfect for meal prep, just reheat in a skillet to bring back crispness.

Try swapping parsley for rosemary or thyme for variation.

Add grated parmesan or chili flakes at the end for extra flavor.
