Ingredients
1 lb shrimp, peeled and deveined
3 tbsp butter
4 cloves garlic, minced
1 tbsp lemon juice
2 tbsp chopped fresh parsley
1 tbsp chopped fresh dill
1/2 cup heavy cream
1/2 cup chicken broth
2 cups cooked rice
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1/4 cup grated Parmesan cheese
Instructions
1. Heat olive oil in a skillet over medium-high heat. Pat shrimp dry, season with salt and pepper, and sear for 1–2 minutes per side until opaque. Remove and set aside.
2. Lower heat to medium and melt butter in the same skillet. Add minced garlic and sauté for 1 minute. Stir in lemon juice, return shrimp, and coat in garlic butter. Remove from heat.
3. In a saucepan, heat butter and a bit of olive oil. Add cooked rice, then stir in heavy cream and chicken broth. Simmer until slightly thickened. Stir in Parmesan, parsley, dill, salt, and pepper.
