Description

Garlic Butter Shrimp Scampi Lasagna is the ultimate comfort food mashup, blending buttery garlic shrimp with layers of cheesy lasagna and creamy white sauce. Ingredients

12 sheets lasagna noodles (cooked)

1.5 pounds shrimp, peeled and deveined

4 tablespoons butter

4 cloves garlic, minced

1 tablespoon olive oil

1 lemon, juiced and zested

1.5 cups ricotta cheese

2 cups shredded mozzarella cheese

1 cup grated parmesan cheese

1.5 cups heavy cream

2 tablespoons fresh parsley, chopped

0.5 teaspoon salt

0.25 teaspoon black pepper


Instructions

1. Melt butter with olive oil in a skillet over medium heat. Add garlic and cook until fragrant.

2. Add shrimp, season with salt, pepper, and lemon zest. Sauté until pink. Remove and set aside.

3. In the same pan, pour in heavy cream and another tablespoon of butter. Stir in grated parmesan until melted and smooth. Add lemon juice and adjust seasoning.

4. In a baking dish, spread a bit of sauce on the bottom. Layer noodles, ricotta, shrimp, mozzarella, and sauce. Repeat layers.

5. Top with remaining mozzarella and parmesan. Cover with foil and bake at 375°F for 25 minutes.

6. Uncover and bake an additional 10–15 minutes until golden and bubbly.

7. Let rest for 10 minutes. Garnish with parsley before serving.

Notes

Let it rest before cutting to avoid sliding layers.

Use tail-off shrimp for easier serving.

Add spinach for extra greens and color.
