Ingredients
1 pound spaghetti
1 pound Italian sausage (mild or spicy)
4 garlic cloves, minced
4 tablespoons butter
1 cup grated Parmesan cheese
3 cups fresh spinach
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)
Instructions
1. Boil spaghetti in salted water until al dente. Reserve 1 cup of pasta water before draining.
2. In a skillet, cook sausage over medium heat until browned and cooked through. Remove and set aside.
3. Lower heat and add butter to the same skillet. Stir in minced garlic and sauté for 1 minute.
4. Return sausage to skillet. Add drained spaghetti and a splash of reserved pasta water. Toss to combine.
5. Stir in Parmesan cheese until melted and well-coated.
6. Add fresh spinach and stir until wilted. Add more pasta water if needed to loosen the sauce.
7. Season with salt, black pepper, and red pepper flakes. Serve hot with extra cheese if desired.
Notes
This recipe serves 4 generously.
If using frozen spinach, thaw and squeeze out excess moisture first.
Reserve extra pasta water to adjust consistency after cheese is added.
