Ingredients
1 lb chicken breast, cubed
4 garlic cloves, minced
2 tbsp olive oil
2 tbsp butter
2 tsp Cajun seasoning
1 tsp salt
1/2 tsp black pepper
12 oz pasta (penne or rigatoni)
3 cups fresh spinach
1 cup artichoke hearts, chopped
4 oz cream cheese
1 cup heavy cream
3/4 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1/2 tsp red pepper flakes
1/2 cup chicken broth
Instructions
1. Season the chicken with Cajun seasoning, salt, and pepper. Sear in olive oil over medium-high heat until golden brown.
2. Add butter and minced garlic to the skillet. Sauté until fragrant. Remove chicken and set aside.
3. In the same skillet, add more butter if needed. Sauté artichoke hearts and spinach until wilted.
4. Stir in cream cheese until melted. Add heavy cream and chicken broth. Stir well.
5. Sprinkle in more Cajun seasoning, red pepper flakes, Parmesan, and mozzarella. Stir until smooth and creamy.
6. Meanwhile, cook pasta according to package directions. Reserve 1/4 cup pasta water before draining.
7. Return the chicken to the skillet and add the cooked pasta. Toss gently to combine.
8. Add reserved pasta water to adjust consistency if needed. Simmer for 2–3 minutes.
9. Serve hot with extra Parmesan or fresh herbs if desired.
