Ingredients
1 lb chicken breast or thighs
4 cloves garlic, minced
3 tbsp soy sauce
1 tbsp honey or brown sugar
1 tbsp cornstarch
2 tbsp vegetable oil
1 red bell pepper, sliced
1 cup broccoli florets
2 green onions, chopped
2 cups cooked rice
Instructions
1. Slice the chicken into bite-sized strips, chop vegetables, and mince the garlic.
2. Toss the chicken pieces in cornstarch until fully coated.
3. Heat 1 tablespoon of oil in a skillet or wok over medium-high heat. Add chicken and cook until golden and cooked through. Remove and set aside.
4. Add the remaining oil to the pan. Stir-fry garlic, bell pepper, and broccoli until crisp-tender.
5. In a bowl, mix soy sauce and honey. Pour into the pan and let it simmer for a minute.
6. Return chicken to the pan. Stir everything to coat evenly in the sauce. Simmer for another minute to thicken.
7. Serve hot over cooked rice. Garnish with chopped green onions.

You can swap chicken for tofu or shrimp for variation.
Add chili flakes for a spicier version.
