Description

This garlic chili oil chicken bites & Cajun alfredo with charred zucchini recipe is a bold, creamy, and spicy skillet dinner ready in under 30 minutes. Perfect weeknight meal with rich Cajun flavor and tender zucchini twists.


Ingredients

1 lb chicken breast or thighs, boneless

2 tbsp garlic chili oil

1 large zucchini, sliced into ribbons

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tbsp Cajun seasoning

1 tbsp butter

1/2 tsp salt

1/4 tsp black pepper

8 oz pasta or 2 cups cooked rice (optional, for serving)


Instructions

1. Heat garlic chili oil in a skillet over medium-high heat. Add chicken pieces and cook until golden and slightly crisped, about 6–8 minutes. Remove and set aside.

2. In the same skillet, add zucchini ribbons. Cook undisturbed to develop char, flip once, and cook until tender. Remove and keep warm.

3. Reduce heat to medium-low. Melt butter, then add heavy cream. Stir in Parmesan cheese and Cajun seasoning. Let simmer until sauce thickens slightly.

4. Season with salt and black pepper to taste.

5. Return chicken to skillet and spoon sauce over. Add zucchini ribbons just before serving.

6. Serve immediately over warm pasta or rice, or enjoy as is.

Notes

Use chicken thighs for extra juicy bites.

Char the zucchini in a hot pan without stirring to deepen the flavor.

Adjust the Cajun seasoning for more or less heat depending on your preference.
