Ingredients
2 chicken breasts
1.5 pounds baby potatoes
4 garlic cloves, minced
3 tablespoons butter
2 tablespoons olive oil
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
1/3 cup parmesan cheese, grated
Instructions
1. Season chicken breasts with salt, pepper, and Italian seasoning.
2. Heat olive oil in a large skillet and sear chicken on both sides until golden. Remove and set aside.
3. In the same skillet, melt butter and add halved baby potatoes, cut-side down. Cook until golden and tender.
4. Stir in minced garlic and cook until fragrant, about 1 minute.
5. Return chicken to skillet, cover, and cook until chicken is fully cooked and potatoes are fork-tender.
6. Sprinkle parmesan cheese over everything and let melt.
7. Garnish with chopped parsley and serve hot.
Notes
This recipe works just as well with chicken thighs.
For extra crispiness, don’t overcrowd the skillet.
