Ingredients

1 lb boneless chicken breast or thighs

3 cloves garlic, minced

⅓ cup grated Parmesan cheese

2 tablespoons butter

1 tablespoon olive oil

½ teaspoon salt

½ teaspoon black pepper

1 cup heavy cream

½ cup chopped sun-dried tomatoes

1 tablespoon Cajun seasoning

2 cloves garlic, minced

1 bunch broccolini

1 tablespoon olive oil

¼ teaspoon salt

1 tablespoon lemon juice (optional)


Instructions

1. Heat butter and olive oil in a skillet. Add seasoned chicken bites and cook until golden and crisp.

2. Add minced garlic and toss, then sprinkle in parmesan. Stir until coated and remove from pan.

3. In the same pan, melt butter and sauté garlic with Cajun seasoning and sun-dried tomatoes.

4. Pour in heavy cream and bring to a gentle simmer. Stir in parmesan until sauce thickens slightly.

5. Return chicken to skillet and coat in the creamy Cajun sauce.

6. Toss broccolini in oil and salt, then grill or pan-sear until charred. Finish with lemon juice.

7. Plate the saucy chicken bites and serve alongside charred broccolini.
