Ingredients
2 large chicken breasts
1 cup grated Parmesan cheese
3 cloves garlic, minced
1 cup Italian-style breadcrumbs
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons olive oil or melted butter
2 large eggs
1/2 cup all-purpose flour
Instructions
1. Pound the chicken breasts to an even thickness and pat them dry.
2. Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs, Parmesan, and garlic.
3. Dredge chicken in flour, dip into eggs, then press into the breadcrumb mixture, coating well.
4. (Optional) Sear the coated chicken in a hot skillet with olive oil for 1-2 minutes per side.
5. Transfer to a parchment-lined baking sheet and bake at 400°F (200°C) for 20–25 minutes.
6. Let the chicken rest for 5 minutes before slicing and serving.
Notes
This recipe works with both chicken breasts and thighs.
For extra flavor, add a sprinkle of Italian seasoning or crushed red pepper to the breadcrumb mix.
To reheat and keep crispy, use an oven or air fryer instead of the microwave.
