Description

Garlic Parmesan Roasted Potatoes are a crispy, flavorful side dish made with baby potatoes, fresh garlic, Parmesan cheese, and Italian herbs. Perfect for weeknights or holiday meals, these golden potatoes pair well with chicken, beef, or vegetarian mains. Easy, gluten-free, and crowd-pleasing.


Ingredients

1.5 pounds baby potatoes

2 tablespoons olive oil

4 garlic cloves, minced

0.5 cup grated Parmesan cheese

1 teaspoon Italian seasoning

0.5 teaspoon salt

0.25 teaspoon black pepper

1 tablespoon chopped fresh parsley


Instructions

1. Wash and dry the baby potatoes. Cut any larger ones in half for even cooking.

2. In a large bowl, toss the potatoes with olive oil, garlic, salt, pepper, and Italian seasoning until evenly coated.

3. Add Parmesan cheese to the bowl and toss again to coat the potatoes thoroughly.

4. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and spread the potatoes out in a single layer.

5. Roast for 30 to 35 minutes, turning halfway through, until golden brown and crispy.

6. Remove from the oven and sprinkle with chopped parsley and optional extra Parmesan. Serve hot.

Notes

Use baby Yukon Gold or red potatoes for best texture.

Toss the potatoes well to ensure even coating and flavor.

Roast on a preheated baking sheet for maximum crispiness.
