Description

This Garlic Scalloped Sweet Potatoes recipe features layers of thinly sliced sweet potatoes baked in a creamy garlic sauce with Gruyère and Parmesan. Ingredients

2.5 pounds sweet potatoes

3 cloves garlic, minced

1.5 cups heavy cream

1 cup Gruyère cheese, shredded

0.5 cup Parmesan cheese, grated

2 tablespoons butter

1 teaspoon salt

0.5 teaspoon black pepper

1 teaspoon thyme leaves (fresh or 0.5 teaspoon dried)


Instructions

1. Preheat your oven to 375°F. Grease a medium baking dish with butter or cooking spray.

2. In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant.

3. Pour in the heavy cream and heat until warm. Stir in Gruyère and Parmesan cheese until fully melted. Add salt, pepper, and thyme.

4. Peel and slice sweet potatoes into thin, even slices, about 1/8 inch thick.

5. Layer the sweet potatoes in the baking dish, overlapping slightly.

6. Pour the garlic cheese cream sauce evenly over the sweet potatoes.

7. Cover with foil and bake for 35 minutes. Remove foil and bake an additional 20 minutes until golden and bubbly.

8. Let rest for 10 minutes before serving. Sprinkle fresh thyme on top if desired.

Notes

Use a mandoline for evenly sliced potatoes.

White sweet potatoes can be used for a less sweet flavor.

Letting the dish rest helps the sauce thicken for better serving.
