Description

This Gluten-Free Mediterranean Chicken Salad is packed with grilled chicken, crisp veggies, and a zesty olive oil dressing. It’s a high-protein, low-carb, gluten-free salad recipe perfect for meal prep, healthy lunches, and light dinners with Mediterranean flair.


Ingredients

2 chicken breasts

1 cucumber

1 cup cherry tomatoes

1/4 red onion

1/2 cup Kalamata olives

1/3 cup feta cheese

2 tablespoons chopped fresh parsley

2 tablespoons lemon juice

3 tablespoons extra virgin olive oil

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Season chicken breasts with olive oil, salt, and pepper. Grill over medium heat for 5–7 minutes per side or until fully cooked. Let them rest, then slice.

2. While the chicken grills, slice the cucumber, halve the cherry tomatoes, thinly slice the red onion, and chop the parsley.

3. Add all chopped vegetables to a large mixing bowl.

4. Add in the olives and crumbled feta cheese.

5. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper to make the dressing.

6. Add the sliced chicken to the bowl and pour the dressing over the top.

7. Gently toss the salad to combine all ingredients evenly.

8. Serve immediately or chill in the fridge for later.

Notes

This salad gets better after a few hours in the fridge.

Store in an airtight container for up to 3 days.

Try adding chickpeas or quinoa for variation.
