Ingredients
300g beef fillet or sirloin
2 shallots
2 cloves garlic
200g chestnut or cremini mushrooms
1 tablespoon Dijon mustard
150ml sour cream
100ml beef stock
1 tablespoon butter
1 tablespoon olive oil
1 tablespoon chopped parsley
Salt to taste
Pepper to taste
Instructions
1. Heat olive oil in a hot skillet. Season beef strips with salt and pepper, then sear quickly until browned. Remove and set aside.
2. Lower the heat and add butter. Sauté sliced shallots and minced garlic until soft and fragrant.
3. Add mushrooms and cook until golden and they release their moisture.
4. Stir in Dijon mustard and beef stock. Let it simmer and reduce slightly.
5. Lower the heat, stir in sour cream, and blend until smooth and creamy.
6. Return beef to the pan, gently coating with the sauce. Warm through without overcooking.
7. Garnish with chopped parsley and serve immediately.
Notes
Use high-quality beef for tenderness.
Don’t overcook the beef when adding it back in.
Stir sour cream in off the heat to avoid curdling.
