Ingredients
1 lb fresh green beans
1/2 cup crumbled feta cheese
3 tbsp olive oil
2 tbsp fresh lemon juice
1 clove garlic, minced
1 tsp Dijon mustard
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Bring a pot of salted water to a boil and cook green beans for 2 to 3 minutes until tender-crisp.
2. Immediately transfer beans to ice water to stop cooking, then drain well.
3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper until combined.
4. In a large bowl, combine green beans and feta cheese.
5. Pour the dressing over and toss gently to coat.
6. Serve immediately or refrigerate until ready to enjoy.
Notes
This salad is best served cold or at room temperature.
For added flavor, try tossing in cherry tomatoes or toasted almonds.
To keep feta from getting mushy, add it just before serving if prepping ahead.
