Ingredients
1 lb chicken breast
2 heads romaine lettuce
1 cup croutons
½ cup grated Parmesan cheese
3 tbsp olive oil
1 clove garlic
1 tsp anchovy paste
2 tbsp lemon juice
1 tsp Dijon mustard
1 egg yolk
½ tsp salt
¼ tsp black pepper
Instructions
1. Marinate chicken breasts with 1 tbsp olive oil, lemon juice, salt, and pepper. Let sit for at least 30 minutes.
2. Grill chicken over medium-high heat for 6–8 minutes per side or until fully cooked. Let rest and slice.
3. In a bowl, whisk together egg yolk, garlic, anchovy paste, lemon juice, Dijon mustard, and salt.
4. Slowly drizzle in 2 tbsp olive oil while whisking to emulsify the dressing. Stir in grated Parmesan.
5. Chop romaine lettuce and wash thoroughly.
6. Toast croutons if making homemade ones.
7. In a large bowl, toss lettuce with Caesar dressing.
8. Add grilled chicken slices, croutons, and extra Parmesan. Serve immediately.
Notes
This salad is best served fresh while the chicken is warm and the croutons are crisp.
You can swap chicken breasts for boneless thighs if preferred.
