Description

A fresh and hearty Grilled Chicken Greek Salad with Tzatziki, packed with grilled chicken, crisp vegetables, creamy tzatziki, and classic Mediterranean flavors. Perfect for healthy meal prep, summer lunches, or easy dinners. Low carb, high protein, and vibrant!


Ingredients

1 lb chicken breast

3 tbsp olive oil

2 tbsp lemon juice

2 cloves garlic, minced

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1 head romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 cucumber, sliced

1/4 red onion, thinly sliced

1/2 cup Kalamata olives

1/2 cup feta cheese, crumbled

1/2 cup tzatziki sauce


Instructions

1. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Coat the chicken and marinate for 30 minutes to 4 hours.

2. Grill the chicken over medium-high heat for 5-7 minutes per side. Let rest, then slice.

3. In a large bowl, add romaine lettuce, cherry tomatoes, cucumber, red onion, and olives.

4. Top with grilled chicken, crumbled feta, and tzatziki.

5. Serve immediately or chill before serving. Drizzle extra olive oil and lemon juice if desired.

Notes

This salad is best served fresh, but components can be prepped ahead.

Chicken can be grilled or pan-seared.

Use store-bought tzatziki or homemade for the best flavor.
