Ingredients
12 fresh oysters in shell
4 tablespoons unsalted butter
3 garlic cloves, minced
¼ cup grated Parmesan cheese
1 tablespoon chopped parsley
1 lemon, cut into wedges
2 tablespoons breadcrumbs (optional)
Salt, to taste
Black pepper, to taste
Instructions
1. In a small saucepan, melt the butter over low heat and stir in the minced garlic. Cook gently for a few minutes, then remove from heat.
2. Preheat your grill to medium-high heat and clean the grill grates.
3. Place oysters cup-side down directly on the grill. Close the lid and cook for 5 to 7 minutes, until they begin to open.
4. Remove oysters from the grill carefully. Discard the top shells and keep the oysters in the deep half of the shell.
5. Spoon garlic butter into each oyster. Top with Parmesan cheese, a small pinch of breadcrumbs, and a bit of black pepper.
6. Return oysters to the grill for another 2 minutes or until the cheese is melted and bubbling.
7. Garnish with parsley and a squeeze of lemon. Serve immediately.
Notes
Grill the oysters cup-side down so they hold in all the buttery goodness.
Don’t overcook — oysters become tough quickly when overdone.
Use a heatproof glove or towel when handling the hot shells off the grill.
