Description
This Grilled Steak Bowl with Creamy Sauce & Grilled Zucchini is a wholesome dinner packed with smoky grilled steak, fresh zucchini, and a tangy herb yogurt sauce. Perfect for a quick summer dinner or easy meal prep.
Ingredients
200 g steak (sirloin, flank, or ribeye)
1 medium zucchini
1 cup cooked rice or grains
2 tablespoons Greek yogurt
1 tablespoon mayonnaise
1 clove garlic, minced
1 tablespoon lemon juice
1 tablespoon olive oil
1 tablespoon chopped fresh herbs (parsley, dill, or chives)
0.5 teaspoon salt
0.25 teaspoon black pepper
Instructions
1. Slice steak into portions and season with salt, pepper, and olive oil. Let it marinate for 30 minutes if time allows.
2. Grill the steak over high heat for 4–5 minutes per side. Rest and slice thinly against the grain.
3. Cut zucchini into strips or rounds, toss with olive oil, salt, and pepper. Grill 2–3 minutes per side until tender.
4. Mix Greek yogurt, mayo, garlic, lemon juice, and herbs in a bowl. Add a little water to thin if necessary.
5. In bowls, layer rice or grains, grilled steak, zucchini, and top with sauce. Garnish with more herbs if desired.
Notes
Use a grill pan if outdoor grilling isn’t an option.
For extra richness, add avocado slices or a poached egg.
The sauce doubles as a delicious dip or sandwich spread.
