Ingredients
1 lb ground beef
2 medium sweet potatoes, diced
1 small onion, chopped
2 cloves garlic, minced
1 bell pepper, chopped
1 tsp paprika
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
2 tbsp fresh parsley, chopped
Instructions
1. Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften and brown.
2. Add chopped onion and bell pepper. Sauté for another 5–7 minutes until the onion is translucent and the peppers are soft.
3. Move the vegetables to one side of the skillet and add ground beef. Break it up with a spatula and cook for 6–8 minutes until browned. Drain excess fat if needed.
4. Stir in minced garlic, paprika, cumin, salt, and black pepper. Mix everything together and cook for an additional 2–3 minutes to allow the spices to blend.
5. Turn off the heat. Sprinkle fresh parsley on top and serve warm. Optionally, top with a fried or poached egg for extra richness.
Notes
Use lean ground beef to reduce grease.
Dice sweet potatoes small for quicker cooking.
Add red pepper flakes if you prefer a little heat.
