Description

Ingredients

1 tablespoon olive oil

1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

2 tablespoons tomato paste

1 can (15 oz) crushed tomatoes

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1 cup orzo pasta

2 1/2 cups water or broth

1/2 cup heavy cream

1/3 cup grated Parmesan cheese


Instructions

1. In a large skillet over medium heat, cook ground beef until browned, breaking it apart as it cooks. Drain any excess grease if needed.

2. Add olive oil to the pan along with the diced onion and minced garlic. Sauté until the onion softens and the garlic is fragrant.

3. Stir in tomato paste and cook for 1 minute to deepen its flavor.

4. Pour in crushed tomatoes, Italian seasoning, salt, and pepper. Simmer the sauce for 5 minutes.

5. Add dry orzo to the pan and stir to combine. Add water or broth, and let it simmer gently until the orzo is tender, stirring occasionally.

6. Lower the heat and stir in heavy cream and Parmesan cheese until creamy and thickened.

7. Adjust seasoning to taste and serve warm, garnished with extra cheese or herbs if desired.

Notes

This dish gets creamier as it sits, so save extra broth or cream to loosen it up when reheating.

Whole wheat orzo works great here if you’re looking for more fiber.

Add red pepper flakes for a little heat, or fresh basil for a bright finish.
