Ingredients
1 cup cottage cheese
2 large eggs
⅓ cup maple syrup
1 teaspoon vanilla extract
½ cup unsweetened cocoa powder
½ cup almond flour
½ teaspoon baking powder
⅛ teaspoon salt
½ cup dark chocolate chips
Instructions
1. Preheat the oven to 350°F and line an 8×8 inch baking pan with parchment paper.
2. In a blender or food processor, add the cottage cheese, eggs, maple syrup, and vanilla extract. Blend until smooth.
3. Add cocoa powder, almond flour, baking powder, and salt to the mixture. Blend again until well combined.
4. Stir in the chocolate chips using a spatula.
5. Pour the batter into the prepared baking pan and smooth the top.
6. Bake for 25–30 minutes or until the center is just set.
7. Let brownies cool completely in the pan before slicing.
