Description

These Healthy Zucchini Fritters are crispy on the outside, tender on the inside, and packed with fresh zucchini, herbs, and wholesome ingredients. Perfect for a light lunch, snack, or side dish, they’re gluten-free friendly and pan-fried with minimal oil for a clean, flavorful bite. Ideal for veggie lovers and meal preppers alike.


Ingredients

1 ½ cups grated zucchini

2 large eggs

2 green onions, chopped

2 cloves garlic, minced

⅓ cup all-purpose flour (or gluten-free substitute)

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon olive oil (for frying)


Instructions

1. Grate zucchini using a box grater and place it in a clean towel or cheesecloth. Squeeze out as much moisture as possible.

2. In a large bowl, mix grated zucchini, eggs, green onions, garlic, flour, salt, and pepper until well combined.

3. Heat a non-stick skillet with olive oil over medium heat.

4. Scoop the mixture and form into small patties. Place in skillet and flatten gently with a spatula.

5. Cook each fritter for 3–4 minutes per side until golden brown and crisp.

6. Transfer to paper towels to drain any excess oil.

7. Serve warm with yogurt sauce, sour cream, or a lemon wedge.

Notes

Zucchini holds a lot of moisture—don’t skip the squeezing step or the fritters may fall apart.

You can use almond flour or gluten-free blends for a GF version.

Double the batch and freeze extras between parchment for easy reheating.
