Ingredients
1 ½ cups raspberries
¼ cup granulated sugar
1 tablespoon lemon juice
1 packet unflavored gelatin
2 tablespoons cold water
1 cup heavy cream
1 teaspoon vanilla extract
Instructions
1. Blend the raspberries until smooth, then strain through a fine mesh sieve to remove seeds.
2. Sprinkle gelatin over cold water in a small bowl and let sit for 5 minutes to bloom.
3. Heat the gelatin mixture gently until dissolved but not boiling.
4. Stir sugar and lemon juice into raspberry puree, then whisk in the cooled gelatin until smooth.
5. In a separate bowl, whip the heavy cream and vanilla until soft peaks form.
6. Gently fold whipped cream into raspberry mixture in batches until fully incorporated.
7. Pour into silicone heart molds or containers of choice.
8. Refrigerate for 4 hours or freeze if unmolding.
9. Let mousse thaw slightly before serving for best texture.
