This Hearty Black Beans and Rice with Sausage recipe is the perfect weeknight comfort food. Packed with smoky sausage, tender black beans, and fluffy rice, it’s easy to make, filling, and full of bold flavor. A delicious one-pot dinner that’s also great for meal prep!
Ingredients
1 tablespoon olive oil
12 ounces smoked sausage, sliced
1 medium onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
2 tablespoons tomato paste
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 teaspoon salt
0.5 teaspoon black pepper
1 cup long-grain rice
2 cups chicken broth
1 can (15 ounces) black beans, drained and rinsed
Instructions
1. Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned and crisp on the edges.
2. Add chopped onion and bell pepper. Sauté until softened, about 4–5 minutes.
3. Stir in minced garlic and tomato paste. Cook for 1–2 minutes until fragrant.
4. Add rice, cumin, smoked paprika, oregano, salt, and black pepper. Stir well to toast the rice slightly.
5. Pour in the chicken broth. Bring to a boil, reduce heat, cover, and simmer for 18–20 minutes or until rice is tender.
6. Gently fold in the black beans. Let everything warm through for about 5 minutes.
7. Fluff with a fork, adjust seasoning, and serve warm.
Notes
The sausage can be swapped for chicken or plant-based options.
Add a splash of broth when reheating to keep it moist.
Top with cilantro, hot sauce, or avocado for extra flavor.
