Description

Herbed Chicken Alfredo with Truffle Feta Cream and Crispy Parmesan Leeks is a gourmet twist on classic Alfredo. This easy chicken Alfredo recipe combines juicy herbed chicken, a rich truffle and feta cheese sauce, and crunchy parmesan leeks, creating a creamy pasta dinner that’s both indulgent and elegant. Perfect for date night or a comforting weeknight meal.


Ingredients

2 chicken breasts

2 tablespoons olive oil

1 teaspoon Italian seasoning

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

2 leeks, white parts only

1/2 cup grated Parmesan cheese

2 tablespoons butter

1 1/4 cups heavy cream

3/4 cup feta cheese (block-style, in brine)

1 teaspoon truffle oil

12 ounces fettuccine or tagliatelle pasta

2 tablespoons fresh parsley, chopped

1 teaspoon lemon zest


Instructions

1. Season chicken breasts with Italian seasoning, garlic powder, salt, and pepper.

2. Heat olive oil in a skillet and sear the chicken on both sides until golden and cooked through. Rest and slice.

3. Thinly slice the leeks, pat them dry, and toss with grated Parmesan.

4. Pan-fry leeks in oil or butter until golden and crispy. Drain and set aside.

5. In a saucepan, melt butter and add heavy cream. Bring to a gentle simmer.

6. Crumble in feta and stir until melted. Add truffle oil and season to taste.

7. Cook pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain.

8. Toss pasta in the sauce, using pasta water to loosen if needed.

9. Plate pasta, top with sliced chicken, crispy leeks, fresh parsley, and lemon zest.

10. Serve immediately for best texture and flavor.

Notes

Use block feta in brine for best flavor and melting.

Crispy leeks are best enjoyed fresh—don’t make them ahead.

Reserve pasta water to adjust the consistency of your sauce.
