Description

This High Protein Rotisserie Chicken Broccoli Pasta is a quick and easy dinner recipe packed with protein, featuring creamy cottage cheese, tender pasta, and nutritious broccoli. A healthy rotisserie chicken pasta recipe that’s perfect for weeknights or meal prep.


Ingredients

2 cups shredded rotisserie chicken

3 cups broccoli florets

8 oz pasta (penne or rotini)

1 cup cottage cheese

2 cloves garlic

1 cup grated parmesan cheese

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Bring a large pot of salted water to a boil. Cook pasta according to package directions. In the last 3 minutes of cooking, add the broccoli florets. Drain and set aside.

2. While pasta cooks, blend cottage cheese, garlic, and half of the parmesan cheese in a blender until smooth.

3. Heat olive oil in a skillet over medium heat. Pour in the blended sauce and gently warm it, stirring until creamy.

4. Add shredded rotisserie chicken to the skillet and stir to coat with sauce.

5. Add the drained pasta and broccoli to the skillet. Toss everything together until well combined and warmed through.

6. Sprinkle remaining parmesan over the top. Season with salt and black pepper to taste.

7. Serve immediately while warm and creamy.

Notes

This recipe is great for meal prep and can be stored for up to 4 days.

For extra creaminess, stir in a splash of milk while reheating.

You can substitute cottage cheese with plain Greek yogurt for a tangier twist.
