Description

Homemade Blueberry Bagels are soft, chewy, bakery-style bagels packed with juicy blueberries and made from scratch with simple pantry ingredients. These homemade bagels are perfect for breakfast or brunch, with a golden crust, tender interior, and classic bagel texture that tastes amazing with cream cheese, butter, or jam.


Ingredients

3 1/2 cups bread flour

1 1/4 cups warm water

2 1/4 teaspoons active dry yeast

2 tablespoons granulated sugar

1 1/2 teaspoons salt

1 cup blueberries

1 tablespoon cornstarch

2 tablespoons honey

1 egg


Instructions

1. In a large mixing bowl, stir together the warm water, granulated sugar, and active dry yeast. Let it sit for 5 to 10 minutes until foamy.

2. Add the bread flour and salt, then mix until a rough dough forms. Knead for 8 to 10 minutes until smooth and elastic.

3. Toss the blueberries with cornstarch, then gently fold them into the dough to keep them from breaking apart too much.

4. Place the dough in a lightly greased bowl, cover, and let it rise for 1 to 1 1/2 hours or until doubled in size.

5. Punch down the dough and divide it into 8 equal pieces. Shape each piece into a ball, then poke a hole in the center and gently stretch into a bagel shape.

6. Place the shaped bagels on a parchment-lined baking sheet and let them rest for 15 to 20 minutes.

7. Preheat the oven to 425°F. Bring a large pot of water to a gentle boil and stir in the honey.

8. Boil the bagels for 30 seconds on each side, then transfer them back to the baking sheet.

9. Brush the tops with beaten egg for a glossy finish.

10. Bake for 20 to 24 minutes or until lightly golden and cooked through.

11. Let the bagels cool for at least 15 minutes before slicing and serving.

Notes

Fresh blueberries work best if you want the dough to stay lighter in color, but frozen blueberries can also be used if added straight from the freezer.

Do not skip the boiling step because it gives the bagels their signature chewy crust.

These bagels freeze very well, so you can slice them first and toast them straight from frozen whenever needed.
