Ingredients
1 cup fruit juice
3 tablespoons unflavored gelatin
2 tablespoons honey
1 tablespoon lemon juice
1 teaspoon vanilla extract (optional)
a few drops natural food coloring (optional)
Instructions
1. Pour the fruit juice into a small saucepan and sprinkle the gelatin evenly on top. Let it sit for 5 minutes to bloom.
2. Turn the heat to low and stir continuously until the gelatin completely dissolves, about 2–3 minutes.
3. Add honey and lemon juice. Stir until fully incorporated.
4. Mix in the vanilla extract and food coloring if using.
5. Pour the mixture into silicone molds and let them sit for a few minutes at room temperature.
6. Transfer the molds to the fridge and chill for at least 1 hour until firm.
7. Carefully remove the gummies from the molds and enjoy immediately or store in an airtight container.
Notes
Let gummies air dry for 24 hours for a chewier texture.
Use silicone molds for best release and fun shapes.
Agar agar can be used for a vegetarian version, but setting time may vary.
