Description

This Homemade Maple Chicken Breakfast Sausage recipe is a flavorful and healthy alternative to traditional pork sausage. Made with ground chicken, maple syrup, and savory herbs, it’s perfect for meal prep, freezer-friendly, and ideal for breakfast sandwiches or a weekend brunch.


Ingredients

1 lb ground chicken

2 tbsp pure maple syrup

2 cloves fresh garlic, minced

1 tsp dried sage

1 tsp dried thyme

1 tsp smoked paprika

1 tsp salt

1/2 tsp black pepper

1/4 tsp red pepper flakes (optional)

1 tbsp olive oil (for cooking)


Instructions

1. In a mixing bowl, combine ground chicken, maple syrup, garlic, sage, thyme, paprika, salt, pepper, and red pepper flakes if using. Mix gently to combine without overworking the meat.

2. Shape the mixture into 10 to 12 small patties or sausage links and set them on a parchment-lined tray.

3. Heat olive oil in a skillet over medium heat. Cook patties in batches for 3-4 minutes per side until golden brown and internal temperature reaches 165°F.

4. Serve warm with your favorite breakfast sides or let cool and store for later use.

5. To freeze, lay patties on a tray in a single layer until frozen solid, then transfer to a freezer-safe bag.

6. Reheat from frozen in a skillet or microwave until heated through and sizzling.

Notes

This recipe works well with ground turkey if preferred.

Avoid overmixing the meat to keep the texture tender.

Add more red pepper flakes if you like a spicier sausage.
