Description

This homemade pancake casserole is a cozy baked breakfast made with fluffy pancake batter, warm cinnamon, and maple syrup. Perfect for brunch, holidays, or meal prep, this easy pancake casserole feeds a crowd and is loaded with comforting flavor.

Ingredients

1 ½ cups all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

2 tablespoons sugar

2 large eggs

1 ¼ cups milk

1 teaspoon vanilla extract

4 tablespoons unsalted butter, melted

½ teaspoon ground cinnamon

Maple syrup, for serving

Instructions

1. In a large bowl, whisk together the flour, baking powder, salt, sugar, and cinnamon.

2. In another bowl, combine eggs, milk, vanilla, and melted butter. Whisk until smooth.

3. Pour the wet ingredients into the dry ingredients and mix until just combined.

4. Pour the batter into a greased casserole dish and let rest for 10 minutes.

5. Bake at 350°F (175°C) for 30–35 minutes or until golden brown and set in the center.

6. Let cool slightly before slicing.

7. Serve with warm maple syrup and your favorite toppings.

Notes

Use room temperature ingredients for a smoother batter.

Don’t overmix the batter—stir until just combined for a fluffier result.

Letting the batter rest before baking helps activate the baking powder and improves texture.
