Ingredients
2/3 cup all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon salt
1/4 cup unsalted butter, softened
1/4 cup granulated sugar
1 large egg yolk
1/2 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a bowl, cream the softened butter and granulated sugar until light and fluffy.
3. Mix in the egg yolk and vanilla extract until smooth.
4. Add flour, baking powder, and salt. Stir until a soft dough forms.
5. Scoop tablespoon-sized dough balls onto the baking sheet, spacing them apart.
6. Gently flatten each cookie with your palm.
7. Bake for 8-10 minutes until the edges are slightly golden.
8. Let cool for 2-3 minutes on the baking sheet before transferring to a wire rack.
Notes
These cookies don’t need to be chilled before baking.
