Ingredients

6 chicken thighs

6 oz feta cheese (block in brine)

1/4 cup hot honey

2 tbsp olive oil

3 garlic cloves, minced

1 tsp chili flakes

5 sprigs fresh thyme

1/2 tsp salt

1/4 tsp black pepper

1 tbsp lemon juice


Instructions

1. Pat chicken thighs dry and season with salt and pepper.

2. In a bowl, mix olive oil, garlic, lemon juice, chili flakes, and hot honey to make the marinade.

3. Marinate chicken in half of the mixture for at least 20 minutes.

4. Sear chicken skin-side down in a hot skillet until golden.

5. Transfer to a baking dish and top with crumbled or sliced feta.

6. Spoon remaining marinade over the chicken and add thyme sprigs.

7. Bake at 375°F (190°C) for 25–30 minutes until chicken is cooked and feta golden.

8. Rest for a few minutes and serve with pan juices spooned over top.
