Description

These hot honey pickled red onions are a quick, flavorful condiment with sweet heat and tang. Perfect for topping tacos, burgers, salads, and sandwiches. A bold, easy pickle recipe that keeps in the fridge and enhances any meal. Includes hot honey, apple cider vinegar, and garlic for a zesty twist.


Ingredients

1 medium red onion

¾ cup apple cider vinegar

2 tablespoons hot honey

1 teaspoon salt

1 garlic clove

½ teaspoon black peppercorns

½ cup water


Instructions

1. Peel the red onion and slice it very thinly for quick absorption of the brine.

2. In a saucepan, combine apple cider vinegar, hot honey, salt, garlic, peppercorns, and water.

3. Bring to a simmer until salt dissolves and the garlic is aromatic.

4. Place the sliced onions in a clean jar and pour the hot liquid over them until fully submerged.

5. Let the jar cool to room temperature before sealing with a lid.

6. Refrigerate for at least 30 minutes before using. Best flavor develops overnight.

Notes

Let the brine simmer, not boil, to avoid bitter flavors.

Use a mandoline for even, paper-thin onion slices.

Add chili flakes or a jalapeño slice for extra heat.
