Description

Huevos Rancheros is a traditional Mexican breakfast made with crispy corn tortillas, refried beans, fried eggs, and ranchero sauce. This bold and flavorful dish is perfect for brunch or a hearty morning meal, and it’s naturally vegetarian with protein-packed ingredients.


Ingredients

2 corn tortillas

2 eggs

1⁄2 cup refried beans

1⁄3 cup ranchero sauce

1 tablespoon cooking oil

1⁄8 teaspoon salt

1⁄8 teaspoon black pepper

1 tablespoon chopped fresh cilantro

1⁄4 avocado, sliced (optional)

2 tablespoons crumbled queso fresco (optional)

1 teaspoon hot sauce (optional)


Instructions

1. Heat a bit of oil in a skillet over medium heat. Fry each tortilla for about 30 seconds per side until lightly crispy but still pliable. Drain on paper towels.

2. In a small saucepan, warm the refried beans. Add a splash of water or stock to loosen them if they feel too thick.

3. In the same skillet used for tortillas, crack in your eggs and fry them sunny-side-up or to your preferred doneness. Season with salt and pepper.

4. Spread refried beans onto each tortilla. Place a fried egg on top, then spoon over warm ranchero sauce. Add avocado, cilantro, queso fresco, or hot sauce if desired.

5. Serve immediately while eggs are hot and tortillas retain a slight crisp.

Notes

Make sure tortillas are not too crispy or they’ll crack when layering.

You can use salsa roja in place of ranchero sauce if needed.

Warm up the beans and sauce ahead of time for faster assembly.
