Ingredients
2 medium apples
1/3 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon lemon juice
1 tablespoon cornstarch
1 package pie crust (2 rounds)
1 egg
1/2 cup powdered sugar
1 tablespoon milk
1/2 teaspoon vanilla extract
Instructions
1. Peel, core, and dice the apples into small chunks.
2. In a skillet, cook apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch over medium heat for 5–7 minutes until soft and thickened. Let cool.
3. Roll out pie crusts and cut into circles using a round cutter or bowl.
4. Add a spoonful of apple mixture to half of the rounds. Cover with remaining rounds, seal edges with a fork, and cut a slit on top for venting.
5. Brush with beaten egg and bake on a lined sheet at 375°F (190°C) for 18–22 minutes until golden brown.
6. Let cool, then mix powdered sugar, milk, and vanilla for the glaze. Drizzle over pies and let set.
Notes
Use tart apples like Granny Smith or sweet ones like Honeycrisp depending on your flavor preference.
You can freeze the hand pies before baking—just thaw slightly before baking as directed.
Letting the filling cool fully helps prevent soggy crusts.
