Ingredients
24 Ritz crackers
20 soft caramels
2 tablespoons heavy cream
1 cup semi-sweet chocolate chips
1 teaspoon coconut oil
2 tablespoons sprinkles or flaky salt (optional)
Instructions
1. Unwrap soft caramels and place them in a small saucepan with heavy cream. Melt over low heat, stirring until smooth.
2. Lay out half of the Ritz crackers on a parchment-lined tray. Spoon about a teaspoon of caramel onto each. Top with another cracker to make sandwiches.
3. Let the sandwiches sit for a few minutes until caramel sets slightly.
4. In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
5. Dip each sandwich into the melted chocolate, coating completely.
6. Place dipped cookies on a parchment-lined baking sheet.
7. Add sprinkles or flaky salt before the chocolate sets, if desired.
8. Chill in the refrigerator for 10 minutes until firm.
9. Store in an airtight container or serve immediately.
Notes
Make sure the caramel is not too hot when sandwiching, or it will make the crackers soggy.
Using coconut oil in the chocolate helps achieve a smooth and shiny finish.
If freezing, separate layers with parchment paper to avoid sticking.
