Description

Irresistible Pistachio Cream Puffs are a decadent dessert featuring light, airy choux pastry filled with silky pistachio cream. Perfect for parties or an elegant treat at home, this pistachio cream puffs recipe is easy, impressive, and melts in your mouth.


Ingredients

1 cup water

1/2 cup unsalted butter

1 cup all-purpose flour

4 large eggs

1/4 teaspoon salt

2 cups whole milk

1/2 cup sugar

3 tablespoons cornstarch

1 cup shelled unsalted pistachios (ground, plus extra for garnish)

1 teaspoon vanilla extract


Instructions

1. Make the choux pastry by simmering water, butter, and salt. Add flour and stir until dough forms. Let cool slightly.

2. Beat in eggs one at a time until the dough is smooth and glossy.

3. Pipe small mounds of dough on a lined baking sheet and bake at 375°F (190°C) until golden and puffed. Cool completely.

4. Make the pistachio cream by cooking milk, sugar, cornstarch, and egg yolks over medium heat until thickened.

5. Stir in ground pistachios and vanilla. Cool completely.

6. Cut tops off cooled puffs, fill with pistachio cream, replace tops, and sprinkle with chopped pistachios.

7. Serve immediately or chill until serving.

Notes

These are best served the day they’re made.

You can store them in the fridge for up to 2 days, though shells soften slightly.

For extra flair, dust with powdered sugar before serving.
