Ingredients
100g ladyfingers
250g mascarpone cheese
3 tbsp brewed espresso or strong coffee
4 tbsp powdered sugar
1 tsp vanilla extract
3 tbsp unsweetened cocoa powder (for dusting)
Instructions
1. Crush the ladyfingers into fine crumbs using a food processor or rolling pin and bag.
2. In a bowl, combine the crumbs with mascarpone, espresso, powdered sugar, and vanilla extract. Mix until it forms a thick, dough-like texture.
3. Roll the mixture into small balls, about a tablespoon each. Place them on a parchment-lined tray.
4. Chill the truffles in the fridge for 1 hour, or in the freezer for 20 minutes until firm.
5. Roll the chilled truffles in unsweetened cocoa powder until fully coated.
6. Serve cold or at room temperature. Store leftovers in the fridge in an airtight container.
