Description

Ingredients

4 cups corn kernels 2 fresh jalapeños diced 4 oz cream cheese softened 1 cup sharp cheddar cheese shredded 6 slices bacon cooked and crumbled 1/2 cup sour cream 1/4 cup mayonnaise 3 green onions sliced 1 tablespoon lime juice 1/2 teaspoon salt 1/4 teaspoon black pepper


Instructions

1. Cook the corn by boiling, steaming, or grilling until tender. Cut kernels off the cob. If using frozen, thaw and pat dry. Fry bacon strips until crispy, drain on paper towels, and crumble. In a large bowl, beat softened cream cheese until smooth. Stir in mayonnaise, sour cream, lime juice, salt, and pepper until combined. Add corn, jalapeños, cheddar cheese, green onions, and most of the bacon to the bowl. Toss until evenly coated. Garnish with reserved bacon and chill for at least 30 minutes before serving.

Notes
