Ingredients
300g bread flour
7g instant yeast
250ml warm water
2 tablespoons olive oil
1 tablespoon sugar
1 teaspoon salt
100g raspberry jam
2 tablespoons melted butter
2 tablespoons sugar for topping
Instructions
1. In a large bowl, mix together bread flour, yeast, warm water, olive oil, sugar, and salt until a shaggy dough forms.
2. Knead by hand or mixer until the dough becomes smooth and elastic.
3. Cover and let the dough rise in a warm place for 1 hour or until doubled in size.
4. Transfer dough to a greased baking pan and press it to fit. Let rise again for 30 minutes.
5. Preheat oven to 425°F (220°C).
6. Dimple the dough using your fingers and spoon raspberry jam into the indentations.
7. Bake for 20–25 minutes until golden and puffed with bubbling jam.
8. While warm, brush with melted butter and sprinkle with sugar.
9. Let it cool slightly, slice, and serve.
Notes
This focaccia is best eaten slightly warm on the same day.
Use a thick jam to prevent it from leaking too much during baking.
