Ingredients
1 cup peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 teaspoon vanilla extract
Instructions
1. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
2. Add the egg and vanilla extract. Mix until fully combined.
3. Stir in the peanut butter until smooth and creamy.
4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture.
5. Scoop dough into balls. Roll each ball in granulated sugar and place on a parchment-lined baking sheet.
6. Use a fork to press a criss-cross pattern into each dough ball.
7. Bake at 350°F (175°C) for 10–12 minutes until edges are golden.
8. Let cool on the baking sheet before transferring to a wire rack.
