John Wayne Casserole is a hearty layered beef casserole made with seasoned ground beef, biscuit crust, sour cream, cheddar cheese, and diced tomatoes with green chilies. This easy baked dinner recipe is perfect for busy weeknights, potlucks, and family meals.
Ingredients
1 can refrigerated biscuit dough
1 pound ground beef
1 small onion, chopped
1 green bell pepper, chopped
1 can diced tomatoes with green chilies, drained
1 packet taco seasoning
1 cup sour cream
1/2 cup mayonnaise
2 cups shredded cheddar cheese, divided
Instructions
1. Preheat oven to 350°F and grease a 9×13 inch baking dish. Press biscuit dough evenly into the bottom of the dish and bake for 10 minutes.
2. Cook ground beef in a skillet until browned and drain excess grease.
3. Add onion and bell pepper and cook until softened.
4. Stir in taco seasoning and drained tomatoes and simmer for several minutes.
5. Mix sour cream, mayonnaise, and 1 cup cheddar cheese in a bowl.
6. Spread beef mixture over crust.
7. Spread sour cream mixture over beef.
8. Top with remaining cheese.
9. Bake 25 to 30 minutes until bubbly.
10. Let rest 10 minutes before serving.
Notes
Let casserole rest before slicing.
Drain tomatoes thoroughly.
Substitute Monterey Jack if desired.
