Description

This Kielbasa Sausage Cheesy Potato Casserole is the ultimate comfort food! Loaded with smoked sausage, hash browns, sour cream, cheddar cheese, and a creamy base, it’s an easy, hearty dinner idea or side dish for holidays and potlucks. Great for meal prep and freezer-friendly too.


Ingredients

1 lb kielbasa sausage, sliced

32 oz frozen hash brown potatoes (shredded or diced)

2 cups shredded cheddar cheese

1 cup sour cream

1 can (10.5 oz) cream of chicken soup

4 tbsp butter, melted

1/2 tsp salt

1/2 tsp black pepper


Instructions

1. Preheat your oven to 375°F and grease a 9×13-inch baking dish.

2. In a large mixing bowl, combine sour cream, cream of chicken soup, melted butter, shredded cheese, salt, and pepper.

3. Stir in the frozen hash browns and sliced kielbasa until evenly coated.

4. Transfer the mixture to the prepared baking dish and spread evenly.

5. Top with additional cheese if desired.

6. Bake uncovered for 40–45 minutes until golden and bubbly.

7. Let rest for 10 minutes before serving.

Notes

This recipe feeds about 6 to 8 people.

You can use fresh potatoes, just parboil them first.

Add a bit of paprika or jalapeños for a kick of heat.
