A fast and flavorful Korean BBQ Beef Bowl with Corn & Creamy Sauce, perfect for weeknight dinners. Packed with tender marinated beef, charred corn, creamy spicy sauce, and served over fluffy rice. This Korean-inspired dinner bowl is quick, easy, and delicious.
Ingredients
1 lb flank steak, thinly sliced
1/4 cup soy sauce
2 tablespoons brown sugar
3 cloves garlic, minced
1 tablespoon sesame oil
1 1/2 cups corn kernels (fresh, canned, or frozen)
2 cups cooked white rice
1/4 cup mayonnaise
1 tablespoon Sriracha or gochujang
2 teaspoons rice vinegar or lime juice
2 green onions, chopped
Instructions
1. In a bowl, mix soy sauce, brown sugar, minced garlic, and sesame oil. Add sliced beef and marinate for 15 to 60 minutes.
2. Heat a skillet over medium-high heat. Cook beef in a single layer for 1–2 minutes without moving, then stir-fry until fully cooked, about 3–4 more minutes.
3. In the same skillet or separate pan, sauté corn until golden and slightly charred, around 5 minutes.
4. For the creamy sauce, combine mayonnaise, Sriracha or gochujang, and rice vinegar or lime juice. Stir until smooth and adjust to taste.
5. Assemble the bowls: place rice in bowls, top with beef and corn, drizzle with creamy sauce, and garnish with green onions.
Notes
The sauce is best made fresh and added right before serving.
You can use skirt steak, ribeye, or even ground beef if needed.
For a vegetarian version, substitute tofu or mushrooms for the beef.
