Ingredients
12 frozen taquitos
1 1/2 cups red enchilada sauce
2 cups shredded Mexican blend cheese
1/4 cup chopped fresh cilantro (optional)
Sour cream or guacamole, for serving
Instructions
1. Preheat the oven to 400°F (200°C).
2. Line a 9×13 baking dish with the frozen taquitos in a single layer.
3. Pour the enchilada sauce evenly over the taquitos.
4. Sprinkle shredded cheese generously on top.
5. Bake for 25 minutes or until the cheese is bubbly and the edges are crisp.
6. Remove from the oven, top with chopped cilantro if using, and serve hot with sour cream or guacamole.
Notes
This recipe works with either beef or chicken taquitos.
